If You’re Looking for a Kentucky Proud Potato Hash Recipe, Try This One!
The great thing about potatoes is that they're extremely versatile. You can cook them endless ways and you can have them for breakfast, lunch or dinner. For this week's Kentucky Cookin' segment here at WBKR, our friend Kelly Bland, from the UK Cooperative Extension Service in Daviess County, is serving up a recipe that can served for any meal really. And, proving that potatoes are truly all-purpose, this recipe can be served as a side dish or the main course.
Here's how to make a quick, tasty and incredibly affordable potato hash.
POTATO HASH
2 tablespoons olive oil
1 tablespoon butter
3 pounds petite red or gold potatoes, diced to 1/2-inch cubes
2 diced onions
2 diced red bell peppers
1 tablespoon minced garlic
Salt and pepper to taste
1/2 cup Parmesan cheese
DIRECTIONS
Heat the olive oil and butter in a large nonstick skillet over medium heat.
Add potatoes and toss to coat with oil.
Cover and cook for 10 minutes, stirring occasionally.
Add onion and peppers. Cook an additional 5 minutes or until golden brown.
Add garlic and cook 2 more minutes.
Season with salt and pepper.
Sprinkle with Parmesan cheese.
